Chicken Pasta Salad Recipe

  1. Cook pasta according to package directions, omitting salt and fat; set aside.
  2. Combine tomato bits and water in a bowl; cover and let stand 10 min.
  3. Drain.
  4. Add in basil and next 5 ingredients; stir well and set aside.
  5. Coat a large non-stick skillet with cooking spray; place over medium high heat till warm.
  6. Add in chicken, saute/fry 5 min or possibly till lightly browned.
  7. Add in bell pepper; saute/fry an additional 5 min or possibly till chicken is done.
  8. Combine chicken mix, pasta and tomato mix in a large bowl; toss gently.
  9. Spoon 1 c. into each of 6 serving plates, sprinkle each with 1/2 tsp.
  10. cheese.
  11. Serve hot.
  12. Yield: 6 servings.
