Zany Zesty North Africa/Middle East Spice Mix

• 1 tablespoon sumac
• 1 tablespoon dried mint
• 12 tablespoon ground cinnamon
• 12 tablespoon sugar
• 12 tablespoon salt
• 1 teaspoon ground black pepper
• 1 teaspoon ground cumin
• 12 teaspoon cayenne
• 12 teaspoon ground coriander
• 14 teaspoon ground cloves
• 1 big pinch saffron, crumbled

1. Combine all ingredients.
2. Sprinkle over scallops, shrimp, pork, chicken, tofu, fish, steaks -- anything!
3. Cook as your heart desires.
4. I recommend cast iron skillet or grill.
