Sauerkraut Potato Salad Recipe

• 3 1/2 c. sauerkraut, liquid removed
• 6 c. diced cooked potatoes
• 2 hard boiled Large eggs, minced
• 3/4 c. mayonnaise
• 1/2 teaspoon paprika
• Salt and pepper to taste

1. Combine sauerkraut, potatoes, and Large eggs.
2. Toss lightly.
3. Add in remaining ingredients and toss lightly and chill.
4. You may also add in diced onions or possibly peppers or possibly celery.
