Cashew Chicken

  1. Cook the chicken cubes in a saucepan of boiling salted water for about 4-5 minutes or until cooked through.
  2. Heat the sesame oil in wok or frying pan over medium high heat.
  3. Add the cashews; stir-fry for about one minute.
  4. Add the minced ginger and stir-fry for 30 seconds.
  5. Stir in the soy sauce and the chili garlic sauce and stir for about 30 seconds more.
  6. Add the cooked chicken cubes and stir-fry for about 2 minutes then stir in the sliced scallions and remove from the heat.
  7. Serve over rice.
