Cashew Chicken
- 1-1/2 lb. boneless skinless chicken breast
- tenders, Cut into 1" cubes.
- 1 Tablespoon toasted sesame oil.
- 3/4 cup roasted cashews unsalted.
- 1 Tablespoon fresh ginger, minced
- 1/3 cup low salt soy sauce
- 1 Tablespoon chili garlic sauce
- 1 cup scallions, sliced on an angle.
- Cook the chicken cubes in a saucepan of boiling salted water for about 4-5 minutes or until cooked through.
- Heat the sesame oil in wok or frying pan over medium high heat.
- Add the cashews; stir-fry for about one minute.
- Add the minced ginger and stir-fry for 30 seconds.
- Stir in the soy sauce and the chili garlic sauce and stir for about 30 seconds more.
- Add the cooked chicken cubes and stir-fry for about 2 minutes then stir in the sliced scallions and remove from the heat.
- Serve over rice.
