Potato Soup
- 6 -8 medium potatoes
- 23 cup butter
- 23 cup flour
- 6 cups milk
- 1 teaspoon salt
- 2 teaspoons pepper
- 12 ounces monterey jack and cheddar cheese blend, shredded
- 10 ounces sour cream
- 1 lb cooked bacon, crumbled
- Bake potatoes at 400 degrees for 1 hour.
- Scoop out the insides into a bowl and set aside.
- In a large pot, melt 2/3 cup butter on low heat.
- Add 2/3 cup flour.
- Gradually stir in 6 cups of milk and turn heat up to medium.
- Add potatoes, salt, pepper, cheese and bacon.
- Cook 15 minutes, stirring constantly until all ingredients are incorporated.
- Stir in sour cream and serve with warm crusty bread -- or even better in a bread bowl!
