Potato Soup

  1. Bake potatoes at 400 degrees for 1 hour.
  2. Scoop out the insides into a bowl and set aside.
  3. In a large pot, melt 2/3 cup butter on low heat.
  4. Add 2/3 cup flour.
  5. Gradually stir in 6 cups of milk and turn heat up to medium.
  6. Add potatoes, salt, pepper, cheese and bacon.
  7. Cook 15 minutes, stirring constantly until all ingredients are incorporated.
  8. Stir in sour cream and serve with warm crusty bread -- or even better in a bread bowl!
