Chimichurri Chicken and Rice

  1. Heat oven to 350 degrees F.
  2. Cook chicken and onions in Dutch oven or large deep skillet on medium heat 6 min.
  3. or until chicken is lightly browned, turning chicken after 3 min.
  4. and stirring onions occasionally.
  5. Remove from pan; cover to keep warm.
  6. Add rice to pan; cook and stir 30 sec.
  7. Add broth and half of Our Favorite Chimichurri; bring to boil.
  8. Add chicken and onions.
  9. (Do not stir.)
  10. Cover tightly.
  11. Bake 30 min.
  12. Top with remaining Our Favorite Chimichurri.
  13. Bake, covered, 5 min.
  14. Top with cheese.
