Cheese Potato Puff

  1. Place potatoes in a large kettle; cover with water.
  2. Add 1/2 tsp.
  3. salt; cook until tender.
  4. Drain; mash potatoes until smooth.
  5. In a saucepan, cook and stir butter, cheese, milk and remaining salt until smooth.
  6. Stir into potatoes; fold in eggs.
  7. Pour into a greased 3-quart baking dish.
  8. Bake, uncovered, at 350F for 40 minutes or until puffy and golden brown.
  9. Sprinkle with chives if desired.
