Honey Banana Muffins
- 1 3/4 c. all-purpose flour
- 2 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1/3 c. sugar
- 2/3 c. chopped almonds
- 1 egg, beaten
- 3/4 c. mashed banana
- 1/2 c. milk
- 1/3 c. vegetable oil
- 1/4 c. honey
- 2 Tbsp. melted butter
- 1/3 c. chopped almonds
- Combine flour, baking powder, salt, sugar and 2/3 cup almonds in a large bowl.
- Make a well in center of mixture.
- Combine egg, banana, milk and oil. Add to dry mixture, stirring just until moistened.
- Spoon batter into greased and floured muffin pans, filling 3/4 full.
- Bake at 400u0b0 for 15 minutes.
- Remove from pans immediately.
- Combine honey and butter, mixing well. Dip top of muffin in honey mixture
- and sprinkle with almonds.
- Yields 14 muffins.
