Crispy Parmesan Broccoli
- 1 lb. broccoli florets
- 1 tbsp. olive oil
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 1/4 c. Parmesan cheese
- 1/4 c. panko bread crumbs
- 2 tsp. olive oil
- 1 tsp. finely grated lemon peel
- Toss broccoli florets with 1 tablespoon olive oil, salt, and pepper on jelly-roll pan.
- Roast in 450 degree F oven 15 minutes.
- Meanwhile, combine grated Parmesan cheese, panko bread crumbs, 2 teaspoons olive oil, and finely grated lemon peel.
- Sprinkle panko mixture over broccoli; roast 3 to 5 minutes or until broccoli is tender and crumbs are golden brown.
