Sophie's fruity yoghurt - soy free and vegan
- 1 cup blueberries
- 1 avocado
- 1/2 cup raspberries
- 3/4 cup canned pineapple (including some of the juice)
- 1/2 cup almond milk or similar alternative
- It's really quite simple - pop it all in a blender, or use a hand blender, and blitz it until smooth.
- Serve cold (I like to keep my fruit in the fridge before hand), and if desired, top with fruit.
- Enjoy!
- NB: this will work with pretty much anything.
- Try swapping the blueberries and pineapple for strawberries and add a touch of vanilla essence!
- Or, how about using canned peaches?
- These are wetter, so use less milk alternative to keep the texture like that of yogurt.
- Fancy a milkshake instead?
- Make exactly the same way and add another cup of milk alternative right at the end.
- Blend for a moment more to mix it and slurp!
