Chicken Santo Domingo

  1. Mix dressing, lime juice, garlic and cumin.
  2. Pour over chicken in large bowl; cover.
  3. Refrigerate 15 min.
  4. Cook bacon in large saucepot on medium heat 5 min.
  5. Add onion, red pepper, oil and bay leaf; cook 5 min.
  6. Drain chicken; discard marinade.
  7. Add chicken to saucepot; cook 5 min.
  8. Stir in stock, wine and tomato paste.
  9. Increase heat to high; bring to boil.
  10. Add potatoes, carrots, salt and black pepper; reduce heat to medium.
  11. Simmer 35 min.
  12. oruntil chicken is cooked through and vegetables are tender.
  13. Add raisins; cook an additional 5 min.
  14. Remove and discard bay leaf.
