Chicken Santo Domingo
- 2 cups KRAFT Zesty Italian Dressing
- 3 Tbsp. lime juice Safeway 3 ct For $1.00 thru 02/09
- 2 cloves garlic, minced
- 1 tsp. ground cumin
- 2 lb. skinless bone-in chicken pieces
- 4 slices OSCAR MAYER Bacon, finely chopped Rite Aid 2 For $7.00 thru 02/06
- 1 medium onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 medium red pepper, finely chppped
- 2 Tbsp. olive oil
- 1 bay leaf
- 1 cup chicken stock
- 1 cup dry white wine
- 1/2 cup tomato paste
- 2 medium potatoes, peeled, cut into 1-inch pieces
- 3 medium carrots, peeled, cut into 1-inch pieces Target 2 lb For $3.00 thru 02/06
- 1/2 tsp. each salt and black pepper
- 1 cup raisins
- Mix dressing, lime juice, garlic and cumin.
- Pour over chicken in large bowl; cover.
- Refrigerate 15 min.
- Cook bacon in large saucepot on medium heat 5 min.
- Add onion, red pepper, oil and bay leaf; cook 5 min.
- Drain chicken; discard marinade.
- Add chicken to saucepot; cook 5 min.
- Stir in stock, wine and tomato paste.
- Increase heat to high; bring to boil.
- Add potatoes, carrots, salt and black pepper; reduce heat to medium.
- Simmer 35 min.
- oruntil chicken is cooked through and vegetables are tender.
- Add raisins; cook an additional 5 min.
- Remove and discard bay leaf.
