Hawaiian Pineapple Cake
- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking soda
- 2 eggs
- 20 ounces crushed pineapple, undrained
- 14 cup canola oil
- 14 teaspoon salt
- 1 teaspoon vanilla
- 1 cup evaporated milk
- 1 12 cups sugar
- 34 cup butter or 34 cup oleo
- 1 teaspoon vanilla
- 1 cup pecans, chopped
- 1 cup coconut
- Beat flour, sugar, soda, eggs, pineapple, oil, salt and vanilla togther 3 minutes.
- Pour into 9x13 pan.
- DO NOT GREASE OR FLOUR PAN.
- Bake 35 minutes in 350 degree oven.
- Meanwhile bring the evaporated milk, sugar, butter and vanilla to a boil.
- Add pecans and coconut.
- Cook an additional 2 minutes.
- Pour over cake when remove from oven.
- Serve with Cool Whip or ice cream.
