Tilapia Dijon Cakes

  1. Heat oven to 400 degrees.
  2. Place tilapia on a sprayed baking sheet; season with 3/4 tsp salt and pepper.
  3. Bake until cooked through, 10-12 minutes.
  4. Let cool, then flake.
  5. In a large bowl, stir together the mayonnaise, eggs, dill and mustard.
  6. Fold in the tilapia and panko.
  7. Form 8 cakes; chill for at least 30 minutes.
  8. Heat the oil in a nonstick skillet over medium heat.
  9. Cook the cakes until golden, 3-5 minutes per side.
