Chicken in Peanut Sauce
- 1 (2 lb) chicken, cut up
- 1 garlic clove, grated
- 3 tablespoons butter
- 1 onion, chopped
- 12 cup chopped green pepper
- 1 12 cups chicken broth
- 12 teaspoon coriander seed, crushed
- 12 teaspoon fresh ginger, grated
- 12 cup peanuts, ground or 3 tablespoons peanut butter
- salt and pepper
- olive, to garnish (optional)
- fried plantain, to garnish (optional)
- Sprinkle cleaned chicken with garlic.
- Melt butter in skillet, and saute chicken until golden brown on all sides.
- Remove.
- Cook onion and green pepper in remaining butter, adding more butter if necessary.
- Return chicken to pan, then add broth, coriander seeds, ginger and peanut.
- Cover and simmer until chicken begins to fall away from the bone, about 1 hour.
- Remove skin and bones and return chicken to gravy.
- Season with salt and pepper.
- Serve with rice.
