Cajun Beef and Zucchini Casserole

  1. Preheat oven to 350 degrees.
  2. Brown cubed beef and onion in olive oil in a deep skillet.
  3. Add olives, Cajun seasoning, and undrained tomatoes.
  4. Stir and simmer on low for 15 minutes.
  5. Cook pasta in boiling, salted water.
  6. Add the zucchini to the pasta for the last 5 minutes, to barely cook.
  7. Drain.
  8. Combine pasta/zucchini with the beef mixture in a baking dish.
  9. Add salt and pepper to taste.
  10. Sprinkle on cheddar cheese.
  11. Bake 30 minutes in a glass dish in the oven.
