Blintzes With Fruit Topping Recipe

  1. In food processor, place cream cheese, ricotta, egg, sugar, and almond extract; blend till smooth.
  2. Mound or possibly pipe 2 heaping Tbsp.
  3. cheese mix down center of crepe.
  4. Fold sides around filling and place in 9- by 13-inch greased pan.
  5. Brush tops with melted butter.
  6. Bake in preheated 400 degree oven for about 10 min.
  7. Fruit topping: Mix together orange juice and cornstarch in small bowl then place in saucepan; add in fruit.
  8. Heat over medium heat till mix thickens and bubbles; stirring constantly.
  9. Serve over hot crepes.
  10. This recipe yields 4 servings.
