Blintzes With Fruit Topping Recipe
- 1 pkt cream cheese - (3 ounce) softened
- 1 c. ricotta cheese
- 1 x egg
- 2 Tbsp. granulated sugar
- 1/2 tsp almond extract
- 1 pkt ready-to-use crepes - (4 1/2 ounce)
- 1 Tbsp. melted butter
- 2 Tbsp. orange juice
- 1 Tbsp. cornstarch
- 2 box frzn deluxe mixed fruit - (10 ounce e thawed
- In food processor, place cream cheese, ricotta, egg, sugar, and almond extract; blend till smooth.
- Mound or possibly pipe 2 heaping Tbsp.
- cheese mix down center of crepe.
- Fold sides around filling and place in 9- by 13-inch greased pan.
- Brush tops with melted butter.
- Bake in preheated 400 degree oven for about 10 min.
- Fruit topping: Mix together orange juice and cornstarch in small bowl then place in saucepan; add in fruit.
- Heat over medium heat till mix thickens and bubbles; stirring constantly.
- Serve over hot crepes.
- This recipe yields 4 servings.
