Polenta Nachos
- 2 Tablespoons Olive Oil
- 1 whole Polenta Roll (about 16 To 18 Oz. Roll), Sliced
- 2 cups Chili
- 1/2 cups Cheddar Cheese, Shredded
- 2 whole Jalapeno, Sliced
- Preheat broiler.
- Heat olive oil in a stove top pan over medium heat.
- Place sliced polenta in the pan and cook on each side for approximately 2-3 minutes.
- Place polenta on a baking sheet, then place a spoonful of chili (cold or warm) on each polenta cake and sprinkle with cheddar cheese.
- Heat under the broiler for 2-3 minutes until cheese is melted and chili heated through (if cold).
- Garnish with jalepeno slice and serve.
