Polenta Nachos

  1. Preheat broiler.
  2. Heat olive oil in a stove top pan over medium heat.
  3. Place sliced polenta in the pan and cook on each side for approximately 2-3 minutes.
  4. Place polenta on a baking sheet, then place a spoonful of chili (cold or warm) on each polenta cake and sprinkle with cheddar cheese.
  5. Heat under the broiler for 2-3 minutes until cheese is melted and chili heated through (if cold).
  6. Garnish with jalepeno slice and serve.
