A Low Calorie Snack: Adzuki Bean and Okara Mochi Cakes

  1. Mix together all the ingredients except for the adzuki.
  2. Once well-mixed, mix in the adzuki.
  3. (If you dissolve the katakuriko into the water beforehand, it will be easier to mix.)
  4. Divide into 8 portions and shape into discs.
  5. Arrange on a plate.
  6. (Make each piece about 1 cm thick.)
  7. Wrap the dish with plastic wrap and heat in the microwave for 1 and 1/2 minutes to finish.
  8. If they're not firm enough, continue heating for 15 seconds at a time, while keeping an eye on them.
  9. This are the adzuki beans I used.
