A Low Calorie Snack: Adzuki Bean and Okara Mochi Cakes
- 50 grams Fresh okara
- 25 grams Katakuriko
- 40 grams Water
- 30 grams Canned cooked adzuki beans (sweetened)
- Mix together all the ingredients except for the adzuki.
- Once well-mixed, mix in the adzuki.
- (If you dissolve the katakuriko into the water beforehand, it will be easier to mix.)
- Divide into 8 portions and shape into discs.
- Arrange on a plate.
- (Make each piece about 1 cm thick.)
- Wrap the dish with plastic wrap and heat in the microwave for 1 and 1/2 minutes to finish.
- If they're not firm enough, continue heating for 15 seconds at a time, while keeping an eye on them.
