Cinnamon Chicken Waffle Bites

  1. Combine all marinade ingredients in bowl; set aside.
  2. Cut each chicken breast in half; place into large resealable plastic food bag.
  3. Flatten each to about 1/2-inch thickness with meat mallet.
  4. Add marinade to bag; seal bag.
  5. Gently shake to coat chicken; refrigerate at least 30 minutes.
  6. Combine butter and maple syrup in bowl; mix well.
  7. Set aside.
  8. Heat gas grill on medium-high heat or charcoal grill until coals are ash white.
  9. Remove chicken from marinade; discard marinade.
  10. Place chicken onto grill.
  11. Grill, turning once, 10-12 minutes or until internal temperature reaches at least 165F and and chicken is no longer pink in center.
  12. Top each chicken piece with 1 slice cheese during last 1-2 minutes of cooking.
  13. Toast waffles.
  14. Immediately spread maple butter onto warm waffles.
  15. Top each with 1 grilled chicken piece.
  16. Cut each chicken-topped waffle into 4 pieces.
  17. Skewer each with toothpick.
  18. *Substitute your favorite frozen waffle.
