Z Tejas Caramelized Onion Sauce

  1. In a heavy bottomed sauce pan saute onions in oil on low heat until they begin to caramelize.
  2. Deglaze onions with cider vinegar and puree using a kitchen blender.
  3. Return pureed onions to pan and add beef stock.
  4. Simmer for 30 minutes skimming off any excess foam.
  5. Add honey and Kitchen Bouquet and reduce to 5 cups.
  6. Mix 1 Tbs.
  7. cornstarch with 2 Tbs.
  8. water and add to sauce.
  9. Let simmer for one minute.
  10. Check the seasonings, add salt and pepper if necessary.
