Chicken and Pork Adobo
- 2 lbs boneless pork, cut in strips 2-inchx1 . 5-inch
- 1 (2 lb) broiler-fryer chickens, cut in pieces
- 2 garlic cloves, minced
- 2 teaspoons paprika
- 12 cup soy sauce
- 6 allspice berries
- 2 inches gingerroot, peeled and shredded
- 14 cup vinegar
- 3 bay leaves
- salt, to taste
- ground black pepper, to taste
- Combine all ingredients in a large skillet.
- Add enough water to barely cover.
- Bring to a boil, turn down to simmer.
- Cover and cook until 2/3 of the liquid has cooked away.
- Uncover, and continue to boil until sauce has reduced to 1/2 cup.
- Serve over hot rice.
