A.1. Sweet Potato Burgers
- 2 cups cooked and mashed sweet potatoes
- 1 cup cannellini beans, mashed
- 1 cup panko bread crumbs
- 1/2 cup flour
- 1 egg
- 3 Tbsp. A.1. Original Sauce
- 4 Tbsp. vegetable oil
- 1 avocado, peeled, pitted and sliced Whole Foods 5 ea For $5.00 thru 02/09
- 6 Tbsp. TACO BELL Thick & Chunky Medium Salsa
- 6 KRAFT Provolone Cheese Slices
- 6 ciabatta sandwich rolls
- A.1. Aioli
- 1/2 cup KRAFT Real Mayo Mayonnaise
- 2 Tbsp. A.1. Original Sauce
- Heat oven to 350 degrees F
- In a medium bowl add sweet potato, cannellini beans, panko, flour, egg and A1.
- Use a fork to mix all ingredients together.
- Cover and chill for 1-2 hours.
- After mixture is chilled divide it into 6 equal parts and shape into patties.
- Add 2 tablespoons of vegetable oil to a medium sized skillet and bring to a medium high heat.
- Once oil is heated, add 3-4 patties to skillet.
- Cook 3-5 minutes on each side to brown the patties.
- Repeat until all patties have been browned.
- Add more vegetable oil as needed.
- Place browned patties on a baking sheet when they are done.
- After all patties have been browned place the baking sheet place in a 350 degree oven.
- Cook for 15-20 minutes or until heated through.
- Approximately 5 minutes before patties are done carefully place split ciabatta rolls on the top rack of the oven, cut side of the roll should be face up.
- Add a slice of KRAFT Provolone to the top half of the roll.
- Remove rolls when cheese is melted.
- TO ASSEMBLE BURGER: Spread A1 aioli on bottom half of ciabatta roll Add the sweet potato burger Add 2-3 avocado slices Add 1-tablespoon salsa Place top half of ciabatta roll with cheese on top
- AIOLI DIRECTIONS: Using a whisk or fork to combine mayo and A1 together.
- Divide and spread on sandwiches.
