Pumpkin and Walnut Spoon Sweet

  1. Preheat oven to 350F.
  2. Spread nuts on baking sheet, and bake 5 to 7 minutes, or until toasted and fragrant.
  3. Cool.
  4. Combine remaining ingredients plus 2 cups water in large saucepan.
  5. Bring to a boil, reduce heat to medium low, and cook 1 hour, or until pumpkin is tender.
  6. Raise heat to medium high, and cook 10 minutes more, or until almost all liquid has evaporated.
  7. Remove from heat, and cool.
  8. Discard lemon zest, cinnamon and cloves, and serve sprinkled with toasted nuts.
