Strawberry Blueberry Oatmeal Muffins
- 1 1/2 cup flour
- 1/2 cup oats or quick oats
- 1/2 cup sugar
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 cup Greek yogurt
- 1 large egg
- 3 tbsp melted butter
- 1 tsp vanilla extract
- 1/2 cup diced strawberries
- 1/2 cup blueberries
- Preheat oven to 375F.
- Line muffin pan with liners or spray with cooking spray.
- Whisk together dry ingredients in a large bowl and set aside.
- In a medium bowl, whisk together wet ingredients.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Once ingredients combined, fold strawberries and blueberries into the batter.
- Divide batter evenly among 12 lined muffin tins.
- Bake for 20-25 minutes or until a toothpick comes out clean.
