Whole roasted apple & garlic chicken

  1. Preheat oven to 400
  2. Wash your bird, remove the guts, and pat dry
  3. Place the chicken in an olive oil coated pan.
  4. I use my 13x9 pyrex.
  5. Mix together the apple & onion then stuff that bird full.
  6. If there's extra then just sprinkle it around in the pan.
  7. For a true "stuffing" just mix in some cold cornbread.
  8. Use your finger to loosen the skin, then shove the garlic bits in various places under the skin.
  9. Try to get some all over & on both sides.
  10. Cut up the potatoes into quarters and put them around the chicken
  11. Mix the season salt, salt & pepper and sprinkle it over everything.
  12. You can add additional seasonings to suit your taste
  13. Place butter in each corner of the pan & on top
  14. Cover the bird with foil (usually takes 2 sheets) and bake for 1.5 hours
  15. Remove the foil and bake another 20 minutes or until meat thermometer reads 170
  16. Let it rest for about 10 minutes before you cut it
