Chexicago Party Mix (Chex Mix Contest Finalist)

  1. Mix cereals, 1 cup (225 ml) of the cheese crackers and 2 cups (475 ml) of the popcorn in large, microwavable bowl.
  2. Set aside.
  3. Place butter, brown sugar, corn syrup and salt in 2-cup microwavable measuring cup.
  4. Microwave on High 1 minute 30 seconds.
  5. Stir; microwave on High until bubbling.
  6. Remove from microwave; stir in baking soda.
  7. Mixture will foam up, but keep mixing until baking soda is dissolved.
  8. Pour over the cereal mixture; stir until fully coated
  9. Microwave on High 4 to 5 minutes, stirring after every minute.
  10. Spread on waxed paper-lined baking sheet.
  11. Let cool for about 5 minutes to let caramel fully harden.
  12. Stir in remaining 1 cup (225 ml) cheese crackers and 1 cup (225 ml) popcorn.
