Simply Corn Chowder

  1. Heat butter and olive oil.
  2. Saute the onions in it, about 5 minutes.
  3. Add garlic, paprika, and red pepper.
  4. Cook stirring about 2 minutes.
  5. Stir in the corn, broth, half-and-half.
  6. Bring to a boil.
  7. Reduce heat and simmer slow about 15 minutes.
  8. Remove half of the soup and puree it.
  9. Mix the pureed soup w/ the reserved soup.
  10. Season with salt and pepper.
  11. Put in serving bowls and garnish as desired.
  12. Enjoy!
