Cauliflower couscous
- 1 tablespoon light olive oil
- 1 teaspoon cumin seed
- 1 teaspoon black mustard seeds
- 1 teaspoon ground turmeric
- 1 onion (diced)
- 1 garlic clove (smashed)
- 4 ounces water
- 1 medium cauliflower
- 4 pieces sun-dried tomatoes packed in oil
- 1 sweet red pepper (diced)
- 12 cup toasted pine nuts
- Heat the oil in a large skillet.
- Add the spices and gently heat until the mustard seeds pop.
- Add the onion and garlic and let them soften.
- While the onion is warming, blitz the cauliflower and sun-dried tomatoes in a food processer until it looks like couscous crumbs.
- Add the cauliflower, tomato, and diced pepper to the onion.
- Add the water and stir to combine all the ingredients.
- Cover and allow to steam until tender -- 5 minutes or so.
