Quiche Au Gorgonzola/Roquefort
- 9 inches frozen pie crusts
- 7 ounces gorgonzola
- 4 ounces cream cheese, room temp
- 23 cup heavy cream
- 2 eggs, beaten
- 1 pinch freshly grated pepper
- 1 pinch cayenne pepper
- 2 tablespoons minced chives
- 4 slices cooked and crumbled bacon (optional)
- Preheat oven to 400 degrees.
- Prepare crust (if necessary) and put aside.
- In a large bowl, combine Gorgonzola, cream cheese and heavy cream.
- Add the eggs, pepper, cayenne, chives and bacon and combine until well-mixed.
- Pour into the prepared pie crust and bake for 30 minutes, until center is set.
- Remove from oven and let rest for at least 5 minutes before serving.
- Can be served warm, room temp, or cold.
