Prosciutto, Kale and Caramelized Shallot Sandwich with Garlic Goat Cheese Spread
- 2 teaspoons Olive Oil
- 2 whole Shallots, Sliced
- 2 cloves Garlic, One Minced, One Left Whole
- 1 cup Fresh Kale, Cut Into 1-inch Pieces
- Salt And Pepper, to taste
- 4 slices Sandwich Bread
- 4 ounces, weight Goat Cheese
- 4 slices Prosciutto
- Heat olive oil in a medium-sized skillet over medium heat.
- Add the shallot and both cloves of garlic (one minced and one whole) to the pan and cook until caramelized and very fragrant, about 10 minutes.
- Remove the whole garlic clove and set it aside.
- Add the kale into the pan and saute until wilted and softened.
- Transfer the mixture into a bowl and season with salt and pepper.
- While the kale is wilting, toast four slices of bread.
- Meanwhile, place the goat cheese and the whole clove of garlic into the food processor and pulse until smooth.
- Spread the goat cheese mixture onto two slices of bread.
- Add two slices of prosciutto on top of the goat cheese on both slices, and top with the shallot/kale mixture.
- Top with the additional slice of bread and serve.
- Cassies Notes: Spinach would be a great alternative to the kale in this sandwich.
- If you dont like goat cheese, try feta or blue cheese instead.
