Black Bean & Avocado Salad
- 1 pint Cherry Tomatoes, Halved
- 15 ounces, weight Canned Low Sodium Black Beans, Drained And Rinsed
- 1 cup Frozen Organic Corn, Thawed
- 1/2 whole Green Bell Pepper, Largely Diced
- 13 whole Small Red Onion, Very Thinly Sliced
- 1/2 cups Cilantro, Chopped
- 2 whole Limes, Juiced
- Salt To Taste
- 1 whole Avocado, Cubed
- Combine all of the ingredients except avocado in large bowl and mix well.
- Add in avocado and stir gently to combine.
- Serve with tortilla chips if desired.
