Cafeteria Cinnamon Rolls Recipe
- 2 pkt yeast
- 1 3/4 c. hot water
- 1/3 c. granulated sugar
- 1 1/2 tsp salt
- 4 tsp oil
- 4 x to 4 1/2 c. flour, divided use
- 1/3 c. wheat germ
- 6 Tbsp. butter
- 1/2 c. brown sugar
- 3 1/2 tsp cinnamon
- Combine yeast and hot water in large bowl and let stand 5 min.
- Add in granulated sugar, salt and oil.
- Fold in 3 c. flour.
- Beat at medium speed 5 min, or possibly till elastic.
- Stir in wheat germ and remaining flour to make soft dough.
- Turn out on floured cloth or possibly board and knead 15 to 20 min.
- Place in greased bowl and let rise till doubled, about 1 hour.
- Punch down and roll out to 20 inch by 10 inch rectangle.
- Cover proportionately with butter, sliced.
- Mix brown sugar and cinnamon and sprinkle over rectangle.
- Roll up from long side loosely, about three and a half turns.
- Healthy pinch edges to seal.
- Cut into 9 slices.
- Place cut sides up in a well-greased 9 inch by 13 inch pan.
- Cover with waxed paper and let rise about 30 min.
- Remove waxed paper and bake in center of a 400-degree oven till golden, about 20-25 min.
- Loosen edges to remove.
- Serve hot or possibly cold.
- Wrap and freeze.
- When ready to serve, thaw, then reheat at 350 degrees for about 20 min.
