Cinnamon-Oatmeal Cookies
- 34 cup old fashioned oats
- 34 cup flour
- 1 12 teaspoons baking powder
- 12 teaspoon sea salt
- 12 teaspoon cinnamon
- 4 tablespoons unsalted butter, softened
- 3 tablespoons apple butter
- 34 cup sugar (I used 1/3-1/2 cup)
- 13 cup brown sugar
- 1 egg
- 1 12 teaspoons vanilla
- Preheat oven to 350F.
- Combine oats, flour, baking powder, salt and cinnamon; set aside.
- In a large bowl, blend butter, apple butter and sugars until smooth.
- Add in egg and vanilla; blend.
- Add dry ingredient mixture; blend.
- Drop batter in 2 Tablespoon amounts onto parchment lined baking sheets.
- Bake for 18 minutes or until light golden brown.
- Allow to cool on sheet for a minute or two, then transfer to a wire rack to cool completely.
