Amaretto Flavor Poached Pears Recipe

  2. This dessert is incredibly easy to prepare, yet elegant sufficient to serve at a formal holiday dinner party.
  3. Be sure which the pears aren't too ripe, as very soft pears tend to break apart during the poaching process.

  5. In a large saucepan over medium-high heat, combine grape juice, lemon zest and juice, and extract.
  6. Bring to a boil.

  8. Peel pears, leaving stems intact.
  9. Using a melon bailer, core pears from the blossom end.
  10. Place pears upright, in bubbling juices, reduce heat, cover, and simmer slowly for 20 to 30 min, till tender.

  12. In a mixing bowl combine ricotta, sugar, and cherries.
  13. Cover and chill till ready to use.
  14. 4.
  15. When pears are done, remove from poaching liquid with a slotted spoon.
  16. Using a spoon or possibly tiny scoop, fill core cavity of each pear with ricotta mix and place on a dessert plate.
  17. Sprinkle with almonds and serve with Italian amaretti cookies, if you like.
