Hearty Manicotti
- 1 lb sausage links, sliced
- 1 lb ground beef
- 1 med onion, chopped
- 1 (16 oz) can tomato puree
- 1/2 cup water
- 1 (6 oz) can tomato paste
- 1 3/4 tsp basil
- 1 1/2 tsp salt
- 1 tsp sugar
- 1/2 tsp pepper
- 1 (8 oz) pkg manicotti shells
- 2 (15 or 16 oz) containers cottage or ricotta cheese
- 1 (8 oz) pkg cheddar cheese, shredded
- 2 Tbsp chopped parsley
- 4 oz grated parmesan cheese
- Preheat oven to 375u0b0. Cook sausage 5 minutes in 1/4 cup water until brown.
- Set aside.
- Brown ground beef with onion.
- Stir in tomato paste and puree, salt, basil, sugar, pepper and water.
- Simmer 45 minutes.
- Add sausage.
- Cook another 15 minutes.
- Boil shells according to pkg directions.
- Drain.
- Mix cheeses and parsley. Pour half of meat mixture into casserole pan.
- Stuff shells with cheese mixture.
- Place on top of meat mixture.
- Cover with remaining meat mixture.
- Bake 30 minutes or until hot.
