Terrific Taco Salad
- 3 cups BOCA Meatless Ground Burger
- 1/2 cup TACO BELL Thick & Chunky Mild Salsa
- 8 cups shredded lettuce
- 1 cup black beans, cooked or canned without added salt, rinsed
- 1 cup frozen corn, thawed
- 2 cups red pepper strips
- 2 Tbsp. fresh cilantro
- 2 Tbsp. lime juice
- 1/2 cup KRAFT Shredded Fat Free Cheddar Cheese
- 4 cups vanilla low-fat yogurt
- 1/4 cup PLANTERS Walnuts
- 2 cups fresh or frozen raspberries
- 32 fl oz ( 4 cups) drinking water
- COMBINE ground burger and salsa in microwaveable bowl; cover with paper towel.
- Microwave on HIGH 1 to 2 min.
- or until heated through, stirring after each min.
- PLACE 2 cups of the lettuce on each of 4 salad plates; top evenly with the beans, corn, peppers and ground burger mixture.
- SPRINKLE each plate with cilantro, lime juice and shredded cheese.
- ENJOY meals with 1 cup of yogurt topped with 1 Tbsp.
- of walnuts and 1/2 cup of raspberries each for dessert.
- SERVE 8 fl oz (1 cup) of water with each meal.
