Tarragon Lobster Rolls

  1. In a medium bowl, mix lobster meat with lemon juice.
  2. In a small bowl, whisk mayo, tarragon and salt.
  3. Fold into lobster meat.
  4. Refrigerate for at least 2 hours to meld flavors.
  5. In a pan, melt half the butter over medium heat.
  6. Add buns and cook until brown.
  7. Add remaining butter and flip buns to brown.
  8. Remove from pan, place on a platter and add lobster mixture.
  9. Serve immediately.
