King Cupcakes (Banana and Peanut Butter)

  1. Preheat oven to 350.
  2. Place 1/4 cup butter and sugar in a large bowl.
  3. Beat and medium speed until blended.
  4. Add egg substitute, beat well.
  5. Add banana and 1 tsp vanilla, beat 1 minute.
  6. Combine flour, baking powder and salt.
  7. Add flour mixture and milk alternately to butter mixture, starting and ending with flour.
  8. Line muffin pan with paper liners.
  9. Fill 2/3 full with batter.
  10. Bake 20 minutes or until toothpick inserted in center comes out clean.
  11. Cook for 5 minutes in pan, then remove to wire racks.
  12. Cool completely before frosting.
  13. For Frosting:.
  14. Beat cream cheese, peanut butter, and 3 tbs butter together until light and fluffy.
  15. Add powdered sugar, 1/2 tsp vanilla and a dash of salt and mix well.
  16. Spread evenly over cupcakes.
