Solyanka(A Russian Fish Soup With Capers And Onions)
- 1 c. dry white wine
- 2 c. minced onion
- 2/3 c. minced celery
- 2/3 c. minced carrots
- 2 c. chopped tomatoes
- 1 1/2 lb. whitefish (cod, halibut, etc.)
- 2 cucumbers
- 4 c. water
- 2 Tbsp. capers, drained
- 2 Tbsp. minced gherkins
- 2 Tbsp. fresh lemon juice
- salt and freshly ground pepper
- 4 Tbsp. minced parsley
- In a large soup pot, heat the wine.
- Add the onion and cook until softened.
- Add the celery, carrots and the tomatoes and continue to cook for 5 minutes.
- Peel, seed and slice the cucumber (about 1 1/2 cups); cut the fish in large chunks.
- Add both to the soup and cook 3 minutes longer.
- Add the water; bring to a boil. Lower heat and simmer until the fish flakes easily (about 10 minutes).
- Turn off the heat.
- Add remaining ingredients and serve immediately.
- Serves 6.
