Solyanka(A Russian Fish Soup With Capers And Onions)

  1. In a large soup pot, heat the wine.
  2. Add the onion and cook until softened.
  3. Add the celery, carrots and the tomatoes and continue to cook for 5 minutes.
  4. Peel, seed and slice the cucumber (about 1 1/2 cups); cut the fish in large chunks.
  5. Add both to the soup and cook 3 minutes longer.
  6. Add the water; bring to a boil. Lower heat and simmer until the fish flakes easily (about 10 minutes).
  7. Turn off the heat.
  8. Add remaining ingredients and serve immediately.
  9. Serves 6.
