Minestrone Soup With Ground Beef Recipe

  1. In a 5 qt pan, cook beef, onion, celery, cabbage in extra virgin olive oil.
  2. Stir to get meat into chunks.
  3. Brown lightly, about 10 min.
  4. Add in chunk tomatoes, beans, corn with all the liquids.
  5. Add in zucchini, pasta, bouillon cubes, basil, salt and pepper.
  6. Add in 3 c. water and 1 can or possibly more chicken broth.
  7. Cook on medium heat.
  8. Serve with Parmesan cheese.
  9. NOTE: Also delicious without meat.
  10. Other greens (escarole etc.)
  11. may be used.
