Pasta Sauce with Pork Ribs
- 6 pieces Pork Ribs
- 1 whole Carrot, Peeled
- 1 whole Small Onion
- 1 stalk Celery
- 4 cups Smooth Tomato Sauce
- 3 Tablespoons Olive Oil
- Salt To Taste
- Your Pasta Of Choice
- Heat the olive oil in a sauce pot large enough to hold the ribs in a single layer.
- Separate the pork ribs and brown them in the olive oil.
- While they are browning, chop the carrot, onion and celery.
- When the ribs are browned, remove them to a plate and add the chopped vegetables to the pot with the pork fat and olive oil.
- Saute until the vegetables soften a bit.
- Put the pork ribs back into the pot with the vegetables, add the tomato sauce and salt to taste.
- Cover and cook, simmering over low heat for about an hour or an hour and a half until the meat is tender and shrinks away from the bone.
- Bring a pot of salted water to boil.
- Cook your pasta according to the directions on the package.
- Drain and toss with the sauce.
- Put the ribs on a platter and serve them as the meat course together with a tossed salad.
