Simple Skinny Meatballs
- 1 (28 ounce) jar pasta sauce
- 1 1/4 pounds ground turkey
- 1/2 cup shredded low-fat Monterey Jack cheese
- 1/4 cup crumbled reduced-fat feta cheese
- 1/4 cup thinly sliced spinach
- 1 extra large egg
- 1 medium shallot, diced
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons chopped fresh basil
- 1 tablespoon olive oil
- 1 clove garlic, minced, or more to taste
- 1 teaspoon chopped fresh oregano
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- Preheat the oven to 350 degrees F (175 degrees C). Pour pasta sauce into a 9x13-inch glass baking dish.
- Combine turkey, Monterey Jack cheese, feta cheese, spinach, egg, shallot, Parmesan, basil, olive oil, garlic, oregano, rosemary, salt, and pepper in a medium bowl. Gently form into 12 meatballs. Arrange evenly over the pasta sauce. Cover baking dish with foil.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 20 to 25 minutes.
