Garden Fresh Ratatouille
- 2 Tbsp. olive oil
- 2 onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 clove garlic, minced
- 2 cups diced potatoes
- 1 tsp. chopped fresh thyme
- 1 each red and yellow pepper, chopped
- 1 yellow zucchini, diced
- 2 tomatoes, seeded, diced Safeway 1 lb For $1.29 thru 02/09
- 1/4 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
- Heat oil in large skillet over medium-high heat.
- Add onions; cook, stirring occasionally until onions start to brown, 5 to 7 min.
- Add garlic; cook 1 min.
- Add potatoes and thyme to skillet.
- Cook, stirring occasionally, until potatoes are partially cooked, 5 min.
- Add peppers and zucchini; cook an additional 5 min.
- Add tomatoes; cook 5 min.
- Add dressing; stir until heated through.
- Serve either hot or at room temperature.
