Garden Fresh Ratatouille

  1. Heat oil in large skillet over medium-high heat.
  2. Add onions; cook, stirring occasionally until onions start to brown, 5 to 7 min.
  3. Add garlic; cook 1 min.
  4. Add potatoes and thyme to skillet.
  5. Cook, stirring occasionally, until potatoes are partially cooked, 5 min.
  6. Add peppers and zucchini; cook an additional 5 min.
  7. Add tomatoes; cook 5 min.
  8. Add dressing; stir until heated through.
  9. Serve either hot or at room temperature.
