Something for Everyone Chili Con Carne

  1. Heat oil over medium- heat in 3-quart saucepan.
  2. Add onion, bell pepper and garlic.
  3. Cook until softened (about 3 minutes).
  4. Stir in chili powder, cinnamon, cumin, salt and red pepper until absorbed.
  5. Add tomatoes, beer, molasses and oregano.
  6. Bring to a boil.
  7. Stir in kidney beans.
  8. Reduce heat, cover and simmer for 20 minutes.
  9. Uncover and simmer another 20 minutes, stirring occasionally.
  10. Remove 2 cups of base for the meat added portion.
  11. For vegetarian:.
  12. Add black beans to remaining base recipe in 3-quart saucepan.
  13. Simmer 10-15 minutes, stirring occasionally.
  14. For Chili Con Carne:.
  15. In 2 quart sauce pan cook ground beef over medium-high heat until brown.
  16. Add the reserved 2 cups base recipe.
  17. Stir in beer and tomato paste.
  18. Cover and simmer 10 to 15 minutes, stirring occasionally.
