Diet Soup
- 2 teaspoons olive oil
- 1 diced onion
- 2 -3 boneless skinless chicken breast halves
- 1 small red pepper
- 14 ounces fat free sodium free chicken broth
- 2 cups water
- 1 rutabaga
- 1 carrot
- 3 stalks celery
- 2 cups frozen green beans
- 14 ounces no-salt-added diced tomatoes
- 1 bouillon cube
- 14 teaspoon garlic powder
- 12 teaspoon black pepper
- In a soup pot add olive oil, onion, chicken, red pepper and cover over a medium low heat, stir occasionally.
- Dice rutabaga in very small cubes 1/2 inchx1/2 inch after removing the waxy outside.
- Peel and dice carrot.
- Once chicken starts to cook through, add in remaining indgredients.
- Cover, let simmer for 1 hour.
- Pull out chicken and shred or cube as desired then add back into the pot.
- Serve.
