Quinoa Salad With Mangoes and Curry Dressing
- 1 13 cups quinoa, rinsed
- 2 large mangoes, cubed
- 1 jalapeno chile, seeded and diced
- 3 green onions, sliced
- 12 cup curry vinaigrette
- 13 cup roasted almonds
- Bring 3 cups of water to boil and add 1/2 tsp of salt and the quinoa, lower the heat, cover and simmer until the quinoa is tender (12-15 minutes).
- Drain.
- Toss all of the ingredients together with the drained quinoa except for the almonds, add those just before serving.
- Enjoy!
