Almond Milk: An Indian Delicacy

  1. Soak the raw almonds in water overnight (about 5 to 7 hours).
  2. O, soak in boiled water for about 5 minutes, then rinse to cool.
  3. Press the almonds between your thumb and forefinger to slip off the skin.
  4. Blot the excess moisture with a paper towel.
  5. They are delicious like this, so try one.
  6. (This is the chef's privilege!)
  7. Mash the almonds with a mortar and pestle.
  8. You could also use a food processor.
  9. You can even use almond powder, but the aroma of raw almonds is best.
  10. Heat the milk in a sauce pan.
  11. Slowly heat while stirring to prevent scalding.
  12. You can also microwave.
  13. Reduce to low heat once it comes to a boil, then add the honey, saffron, and almonds.
  14. Then simmer on low heat for about 5 minutes.
  15. Pour it in a cup, and serve.
  16. I recommend it for a tea break.
  17. In Hindi, this is called "badam" milk.
