Southwest Smoked Turkey Omelet

  1. For each serving: Beat 2 eggs and 1 Tbsp.
  2. milk with whisk until well blended.
  3. Season with salt and pepper.
  4. Pour into 8-inch nonstick omelet pan sprayed with cooking spray.
  5. Cook until egg mixture is set, but top is still moist.
  6. As egg mixture sets, lift slightly with spatula to allow uncooked portion to flow underneath.
  7. Top 1/2 of omelet with turkey, salsa and cheese.
  8. Slip spatula underneath, tip skillet to loosen and gently fold omelet in half.
  9. Cook an additional 20 sec.
  10. or until cheese is melted.
  11. Slide omelet onto plate to serve.
