Southwest Smoked Turkey Omelet
- 100 each eggs
- 3-1/4 cups milk
- 1/4 cup salt
- 2 Tbsp. pepper
- - cooked turkey breasts, chopped
- 3 cups salsa
- 3 qt. VELVEETA Pasteurized Process Cheese Spread - Feather Shred
- For each serving: Beat 2 eggs and 1 Tbsp.
- milk with whisk until well blended.
- Season with salt and pepper.
- Pour into 8-inch nonstick omelet pan sprayed with cooking spray.
- Cook until egg mixture is set, but top is still moist.
- As egg mixture sets, lift slightly with spatula to allow uncooked portion to flow underneath.
- Top 1/2 of omelet with turkey, salsa and cheese.
- Slip spatula underneath, tip skillet to loosen and gently fold omelet in half.
- Cook an additional 20 sec.
- or until cheese is melted.
- Slide omelet onto plate to serve.
