Pennsylvania Dutch Ice Cream Pudding Recipe
- 60 Ritz crackers, crushed
- 1/2 c. melted butter
- 2 sm. pkg. vanilla instant pudding
- 1 1/2 c. lowfat milk
- 1 quart. plus 1 pt. vanilla ice cream
- 1 (8 ounce.) Cold Whip
- Mix crushed crackers and butter together.
- Save out 1/2 c.. Press remaining crumbs into bottom of 9x13 inch pan.
- Mix pudding and lowfat milk together with hand mixer, add in softened ice cream.
- Spread over crumb mix and cover with Cold Whip.
- Chill 8 hrs or possibly overnight.
