Skinny-Minnie Soup
- 1 small head of cabbage, chopped
- 2 cups celery, chopped
- 1 cup onion, chopped
- 1 cup bell pepper, chopped
- 10 cups water
- 1 (10 ounce) box frozen mixed vegetables
- 1 (10 ounce) boxof frozen yellow squash or 1 (10 ounce) box cauliflower or 1 (10 ounce) box green beans
- 2 (12 ounce) cansv-8 juice
- 13 cup beef bouillon granules
- 1 tablespoon chopped parsley
- 1 tablespoon knorr swiss armat seasoning for meat
- 12 teaspoon black pepper
- 12 teaspoon sage
- 12 teaspoon tarragon
- Boil for 20 minutes cabbage, celery, onion and bell pepper with 10 cups water.
- Add frozen mixed vegetables and squash; cook 10 minutes.
- Add remaining ingredients.
- Cook 1 hour longer.
